Mojo Pork

Ingredients

4 lbs. pork shoulder (chop cuts are okay if that's all you have)


Mojo Criollo:

1 1/2 teaspoons salt

1 teaspoon ground black pepper

1 cup orange juice

1/2 cup lime

1/2 cup olive oil

8 cloves garlic, chopped

2 teaspoons dried oregano

2 teaspoons ground cumin

Description

Popular Cuban pork dish. Traditionally it is made with sour oranges, which can sometimes be hard to find. If you do have them, use those instead of the regular orange juice and lime.

Directions

Mix the Mojo criollo ingredients together.

Trim up your pork so there are no very large chunks of fat and cut it down if need be so it will easily fit in the crock pot.

Place the pork in the pot and add the mojo criollo. Move the pork around and make sure it is coated.

Cover and cook on low for 6-8 hours or until pull apart tender, checking periodically and rotating it.

Pull the meat out, let cool enough to handle, and shred. Discard any bones and cartilage. Put the liquid in a pan and simmer down to at least half, then stir the meat and liquid back together in the crock pot. Set to warm.

Serve over white rice or coconut rice, with fried plantains if desired; or make Cubanos.
